Dark Chocolate Cake



INGREDIENTS 

1cup Flour
1cup powder Sugar
3/4cup Unsalted butter
1/4cup Cocoa powder
50gm Dark cocolate
1/2tsp Vanilla essence
2eggs
1tsp baking powder
1/2tsp baking soda
some hot water/milk


DIRECTION

In a bowl sieve flour,coco powder,baking soda and baking powder twice.
In a bowl mix butter,eggs and sugar,beat it till it become fluffy.
In double boiler melt chocolate.add it in mixture and blend it well.
Add flour,vanilla essence and mix it till well combined.
Now add hot water to make paste of ribbon making consistency.
in 9''inch mould (covered with butter paper),pour the mixture.
Heat the cooker(dont use water) for 3-4 minutes.put stand and mould over it.
close lid(without whistle and rubber) and let it cook on slow heat for 40 minuts.
check it with knife.if it comes clean,cake is done.
Cool it and then demould.


# i spread chocolate sauce in cake by making vertical layers.

Bottle Gourd with Bengal gram



INGREDIENTS

1/2cup bengal gram (soaked 1hrs)
1.5cup bottle gourd peeled n medium sliced.
1onion
3-4 garlic
1/2inch ginger
1 tomato
whole spices(1inch cinnamon,3-4 cloves,4-5 pepper,2red chillies,1green cardmom)
1/2tsp Cumin seeds
1/2tsp coriander powder
1/2tsp chilli powder
1/2tsp turmeric powder
pinch of asafoetida 
2tbsp Oil 


DIRECTION

  • In cooker heat oil.add whole spices and cumin seeds.after 2min add onion,ginger,garlic.saute till onion become golden.
  • Add tomato pieces and all spices.cook for 4-5 minutes.
  • Add gram and  bottle gourd.now add 1.5 cup water.cook and garnish with green coriander.
  • Serve hot with rice or paratha.











Spring Roll



INGREDIENTS

For Wrapper(it will make arround 6-7 wrappers)
1/2Cup Flour
1Cup Water
1/2 tsp Salt 

For Filling
1/4Cup shredded Cabbage 
1/4Cup shredded Carrot,beet root
1 Onion Julians
1/4 cup boiled noodles
2 garlic
1/4 inch garlic(optional)
1tsp soya sauce
1tsp chilli flacks
Salt to taste
1/4tsp Ajinomoto (optional)
Oil for frying

DIRECTIONS

  • Mix flour,water and salt and make lump free past.
  • Heat non stick pan and add some drops of oil.put it on medium heat.take 1 tbsp paste and spread on pan as thin as possible(the thinner the better).in 2-3 minute it ll start leaving the edges,remove it from pan.make wrapper from remaining paste and keep aside.
  • In deep pan heat some oil.add ginger garlic and saute till it start sticking in bottom.Add onions.after stirring for 1-2 minuts add remaining veggies.saute for 4-5 minutes.
  • Add soya sauce,chilli flacks,ajinomoto,salt.filling is ready.
  • for filling method follow following steps. :)  make all and keep aside.


  • Heat oil in deep heavy bottom pan.put it on medium heat.fry rolls till golden brown.
  • Serve it with ketchup.

# in filling mushroom,cheese,cucumber any veggies can be added.

Ayam Masak Merah (Red Honeyed Chicken)


Marinade:
5-6 chicken pieces 
1.5 teaspoon salt
1 teaspoon turmeric
1 tablespoon flour
a few dashes of pepper
Enough oil for deep frying/shallow frying
Paste:
1 large onion
4 cloves of garlic, peeled
1 inch of ginger
5 red chilis, de-seeded
1 tablespoon cumin powder
2 tablespoon coriander powder
Other ingredients:
1 small can of tomato paste
2 cloves of garlic, minced*
1 inch of ginger, minced*
4 pods of cardamom
3 cloves
1 star of anise
1 stick of cinnamon
1/4 cup of honey
1/2 cup of water
salt to taste
1 Onion, sliced in rings

Method:
  • Mix all ingredients in marinade section (except oil) untill the chicken pieces are well coated. Let it marinate for at-least 30 minutes.
  • Heat oil in a pan with medium heat. When oil is hot, add your chicken pieces and fry until all sides are golden brown.
  • Now blend all the ingredients in paste section and set aside.
  • Discard most of the oil used for frying you chicken and leave about 2 tablespoons of oil in.With the same pan on medium high heat, saute your cardamom, cloves, star of anise and cinnamon until fragrant (approx 1-2 mins).After that, add the garlic, ginger,and blended ingredients.Cook it on low heat for 10-15minutes(untill oil get separated).
  • Now add tomato paste. Saute the all the ingredients together to form a thick paste. Add water, to thin the paste a little.
  • Now you can add your chicken and onion rings in. Start combining the sauce and chicken well, making sure every piece of chicken is coated and then add your honey in. Mix well again.
  • Let the sauce thicken and reduce, lower heat, cover the pan and continue cooking for about 15 minutes. Your Ayam Masak Merah is now ready to serve!   



# you can reduce honey as per ur taste.

Shakshuka(Turkish style Spicy egg)




INGREDIENTS

4 Eggs
2 Onions chopped
3 Tomatoes chopped
3-4 garlic clove chopped
1/2inch ginger chopped
2 Green chilies
1/2 cup shredded Cabbage,carrot
1/2 tsp red chilli
1/2tsp coriander powder
1/4 tsp black pepper powder
1/2tsp Garam masala
1.5 tbsp Oil
Some chilli flacks
Salt to taste


DIRECTION

  • In wide pan heat oil.Add onion and saute untill light brown now add ginger-garlic n saute for 1min.
  • Now add shredded cabbage and carrot and cook for another 3-4 minutes.
  • Add tomatoes and all spices.close the lid and let it cook for 5-7minute on low flame.
  • now make small 4 nests in mixture.crack egg in each nest.sprinkle some chilli flacks,salt and crushed pepper.
  • Close the lid and let it cook for another 6-7 minutes.it will become solid white on top.
  • Garnish with green coriander.serve with roti,paratha or as side dish.





#you can add other veggies like bell pepper,capsicum, broccoli etc..than u need to adjust    spices accordingly.
##in traditional Shakshuka,some sugar also been used.
